Ingredients

Weigh all ingredients on a kitchen scale, don't use volume measures. Accuracy is essential for rye bread.[2][9]

Ingredient Amount % Note
Medium rye flour 400g 80% German Type 1150 or similar
Bread flour 100g 20% for better structure
Water 380g 76% lukewarm, 95-100ยฐF / 35-38ยฐC
Active rye starter 100g 20% 8-12h after feeding
Salt 10g 2%
Walnuts 80g 16% roughly chopped, optionally toasted

๐Ÿ’ก Tips

  • Dough rising too fast? โ†’ Fridge slows fermentation[3]
  • No time to bake? โ†’ Shaped dough keeps 48h in fridge[3][5]

Step by Step

1

Mix ingredients

Combine flours in a large mixing bowl. Add water, starter, and salt. Mix with a dough scraper or spoon until no dry spots remain. The dough is sticky โ€“ this is normal for rye.[4][9]

โœ“ Visual check: Evenly moist dough, no flour pockets
โš ๏ธ Common mistake: Adding more flour because it's sticky โ†’ DON'T, rye dough is always sticky

โฑ 5 minutes

2

Add walnuts

Place walnuts on dough. With wet hands, fold them in from outside to center. For deeper aroma, toast walnuts 8โ€“10 minutes at 150ยฐC/300ยฐF first.[10][2]

โœ“ Visual check: Nuts evenly distributed
๐Ÿ’ก Toast walnuts for 10 min at 300ยฐF/150ยฐC for deeper flavor

โฑ 2 minutes

3

Bulk fermentation

Cover the bowl and rest at room temperature (68-72ยฐF / 20-22ยฐC). Rye needs gentler handling and longer rests to avoid gummy crumb; control temperature to prevent overproofing.[2][5]

โœ“ Visual check: Dough has risen ~50%, surface slightly domed, some bubbles visible

โฑ 5-6 hours (varies with temperature)

4

Shape

Generously flour work surface with rye flour. Turn dough onto it using a dough scraper. With floured hands, shape into an oblong loaf (don't knead, just shape). Place in a floured banneton, seam side up. For even nut distribution use lamination/folding during bulk fermentation.[5][1]

โœ“ Visual check: Compact loaf with smooth underside

โฑ 5 minutes

5

Final proof

Cover and rest until dough has noticeably risen. Use the poke test โ€” the dough should spring back slowly, not immediately and not stay indented.[3][5]

โœ“ Visual check: Poke test: Press lightly on dough. Should spring back slowly, not immediately and not at all.[5]

โฑ 1.5-2 hours at room temp, or 12-18h in fridge

6

Bake

Preheat oven to 480ยฐF/250ยฐC with your Dutch oven inside (30 min). Turn bread onto parchment paper, score with a bread lame. Place in Dutch oven, lid on. After 15 min, remove lid and reduce to 400ยฐF/200ยฐC. Steam or covered baking promotes oven spring and crust formation.[5][1]

โœ“ Visual check: Crust dark brown, sounds hollow when tapped on bottom. Check internal temp with a thermometer: 205-208ยฐF / 96-98ยฐC[6]

โฑ 55-65 minutes

7

Cool

Use oven mitts to transfer bread to a wire rack. Cool for at least 2 hours. IMPORTANT: NEVER cut rye bread while warm โ€“ the crumb will become gummy due to ongoing starch and moisture redistribution.[2][4]

โœ“ Visual check: Bread no longer feels warm to touch

โฑ 2+ hours

Tips & Variations

Variations

With honey

Add 1 tbsp honey to water

โ†’ Milder flavor, browns faster

Seed version

โ†’ More crunch, nuttier

100% rye

Replace bread flour with rye

โ†’ Denser, more sour, shorter shelf life

Pro Tips

  • ๐Ÿ’ก Slice bread next day with a serrated bread knife โ€“ flavor continues developing[6]
  • ๐Ÿ’ก Use walnut oil for greasing to enhance nutty flavor
  • ๐Ÿ’ก Pre-toast nuts separately to preserve crunch; add during folds to avoid tearing dough[10][2]

Common Issues

Not going as planned? Common issues:

Storage

Bread box/bread bag

5-7 days

Cut side down

Kitchen towel

3-4 days

Linen, not cotton

Freezing

3 months

Slice before freezing, thaw individually

โš ๏ธ Don't store bread in the fridge โ€“ it stales faster (starch retrogradation)[2][9]
